In an era of rapid change across global consumers, Australia’s valuable meat production industries need skilled professionals who can apply current knowledge and technology to meet the demands of consumers and solve complex industry problems.

Develop an in-depth understanding of all aspects of meat processing with this unit, which introduces you to key features of meat science, processing and technology for beef and lamb, with some focus also on pork, poultry and other meat species.

Encompassing all stages of meat processing, you will explore meat safety, carcass grading, meat preservation, storage, packaging and transport, secondary processing and smallgoods production, cooking and value adding.

You will also have opportunities to extend your capacity for analysing and generating solutions to the complex problems you may face in practice, with a hands-on industry tour and practical experience during the unit’s practical sessions or intensive school.

The School of Environmental and Rural Science considers all practical/laboratory/tutorial activities as essential to student learning. Attendance and participation in all practical/laboratory/tutorial classes (sessions) is mandatory - exemptions will not be granted without supporting evidence.

Learning outcomes

Upon completion of this unit, students will be able to:

  1. apply their advanced knowledge of biological factors contributing to meat quality; and demonstrate their ability to analyse and generate solutions to complex problems;
  2. demonstrate their advanced theoretical and technical understanding of current global and Australian meat industry practices;
  3. analyse critically and evaluate current meat industry practices and communicate this information to others in written and verbal formats; and
  4. identify the economic factors contributing to profitability in the meat industry, thereby demonstrating an ability to work autonomously and use well-developed judgement.
